About the Chef
Chef Cole began his career as a chef at the Five Star Five Diamond Relaix and Chateau Property, The Woodlands Resort and Inn in Summerville, SC. While working under the direction and guidance of Three Time James Beard Award Semi Finalist, Chef Ken Vedrinski, Matt worked his way up through the brigade beginning at Garde Manger to Poissonier while the Woodland’s achieved it celebratory accolade of receiving it’s five diamond status and ranked #1 in Conde Nast’s Best by Food United States with a perfect 100 scoring among various other awards. Chef Ken urged Matt to further his training at the Culinary Institute of America in Hyde Park, New York where he earned the highly coveted Craig Claiborne scholarship and completed a patisserie internship at the Five Star Five Diamond Relaix and Chateax Property of The Little Nell, Aspen CO further rounding out his culinary experience. Upon returning to Charleston, Chef Cole entered a new adventure in his career as a Private Chef for some of the most prominent CEO’s and A-List celebrities in the country. This is where his passion for vintage vehicles entered as he was in the proximity of some of the rarest and most beloved vintage finds of our time. He has provided his skills on yachts and in chalets, from Prague to Ireland and the Bahamas as well as all over the country. One of his most important take aways from cooking as a private chef is the ability to adapt to any circumstance as well as having a very vast knowledge of worldly cuisine. “As a private chef, you do not get the luxury of specializing in one type of cuisine. You must master all of them. Each day is different than the last as one’s appetite and cravings are always on the move.”
Upon meeting the love of his life, Shaina, they completed a final private chef position together and decided to settle down. Chef Matt received his experience with the Hawaiian cuisine at Roy’s in Naples, FL under James Beard Award winner Roy Yamaguchi. He became very passionate about the delicious and inspiring flavors of the islands and enjoyed working with the local fish overnighted from Hawaii each day.
Chef Cole began his food truck experience in Greenville, SC whilst operating a vintage 1953 Chevy wood fired pizza food truck under the ownership of Coastal Crust located in Charleston, SC. He knew he had found a perfect combination between the old truck and cooking his delicious cuisine. His wife Shaina, was offered an opportunity in Greenville, NC and off they went to start the process of building what is now a gorgeously restored 1946 Chevy Firetruck into PreVail Hawaiian Street Food. Matt and Shaina are ecstatic to bring the delicious and unique flavors of Hawaii to Greenville, NC and the surrounding areas offering food truck services, private catering and an experience that will leave you craving your next bite at PreVail Food Truck!
